  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 large carrots (peeled and chopped)
  • 1 stalk celery (diced)
  • 1/3 cup white wine (e.g., pinot grigio)
  • 2 cups chopped kale (stems removed)

Instructions

  1. Sauté the onion in olive oil in a large pot until slightly browned.
  2. Add garlic, celery, and carrots; cook for another 10 minutes until softened.
  3. Stir in white wine and let it evaporate for about 5 minutes.
  4. Add the remaining ingredients except kale; stir well.
  5. Bring to a boil, cover, reduce heat, and simmer for 15 minutes.
  6. Blend a portion of the soup until smooth; return to pot.
  7. Stir in chopped kale and simmer for a few minutes until wilted.
  8. Serve warm with crusty bread.
