  • 2 large skinless boneless chicken breasts
  • 9 oz sun-dried tomato strips in oil
  • 3 cups elbow macaroni (uncooked)
  • 1 cup grated parmesan cheese
  • 3/4 cup shredded mozzarella cheese
  • 3 cups baby spinach leaves
  • 2 cups chicken broth
  • 3 cups milk

Instructions

  1. Season chicken with salt, pepper, paprika, and parsley. Sear in a large pot until golden brown and cooked through; set aside.
  2. In the same pot, sauté chopped onion and minced garlic in butter until translucent. Add white wine and let simmer.
  3. Stir in sun-dried tomatoes with reserved oil; cook briefly.
  4. Mix flour into the pot, then add chicken broth, milk, herbs, salt, and pepper; bring to a low simmer.
  5. Add dry macaroni and cook until al dente, stirring occasionally.
  6. Remove from heat; stir in all cheeses until melted and adjust seasoning.
  7. Slice chicken and mix into pasta; garnish with parsley before serving.
