  • ½ cup whole wheat or unbleached all-purpose flour
  • ¼- cup water (ideally at 75°F)

Instructions

  1. In a clean glass jar, mix together ½ cup of flour with ¼-⅓ cup of warm water until you achieve a thick yet pourable consistency.
  2. Cover the jar with a paper towel secured by a rubber band to allow airflow while keeping contaminants out.
  3. Place the jar in a warm spot (around 75°F) for 24 hours.
  4. After 24 hours, check for bubbles. If present, discard half of the mixture and feed it with another ½ cup of flour and ¼-⅓ cup of water. Mix well.
  5. Repeat the feeding process daily for about five days until bubbly and active.
