  • 1 tablespoon chopped garlic
  • ½ red jalapeño pepper (sliced)
  • 3 slices fresh galangal
  • 1 stalk lemongrass
  • 10 lime leaves (optional)
  • 1 tablespoon red Thai curry paste
  • 4 cups chicken broth
  • 2 cans full-fat coconut milk
  • 1 pound chicken breasts (cut into bite-sized pieces)
  • 8 ounces white mushroom caps (sliced)
  • Fresh lime juice, fish sauce, brown sugar for seasoning
  • Garnish: sliced green onions and chopped cilantro

Instructions

  1. In a slow cooker, combine white onion slices, chopped garlic, jalapeño pepper, galangal, lemongrass, lime leaves, red Thai curry paste, and chicken broth. Stir well.
  2. Cover and cook on HIGH for 3 hours or LOW for 6 hours, stirring occasionally.
  3. After cooking time ends, remove solids using a slotted spoon.
  4. Add coconut milk, chicken pieces, and mushroom caps to the slow cooker; stir to combine.
  5. Cover and cook on HIGH for an additional hour or LOW for 2 hours until chicken is cooked through.
  6. Stir in brown sugar, fish sauce, and lime juice; adjust seasoning as needed.
  7. Serve hot in bowls garnished with sliced green onions and cilantro.
