  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces Italian sausage
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounces refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Sauté diced onion with a pinch of salt and pepper for 3–4 minutes until softened.
  3. Add minced garlic and Italian seasoning; sauté for an additional 30 seconds.
  4. Stir in tomato paste and cook for another minute before adding crumbled Italian sausage. Brown the sausage completely.
  5. Pour in chicken broth and crushed tomatoes; add the refrigerated ravioli along with salt and pepper to taste.
  6. Bring the mixture to a simmer, then reduce heat and let it cook for about 3–5 minutes until ravioli is al dente.
