  • 455g (1lb) extra lean ground beef
  • 225g (8oz) fresh baby Portobello mushrooms
  • 2 red onions, sliced
  • 3 cloves of garlic, crushed
  • 400ml beef stock
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon arrowroot flour
  • Fresh chopped Italian parsley for garnish

Instructions

  1. In a frying pan over medium-high heat, brown the ground beef seasoned with salt and pepper. Transfer to a dish and set aside.
  2. Spray the pan with oil, then sauté sliced onions and crushed garlic until softened.
  3. Add fresh mushrooms along with some beef stock. Cook until caramelized.
  4. Return browned beef to the pan along with thyme, tomato puree, balsamic vinegar, mustard, remaining beef stock, salt, and pepper; stir well.
  5. Mix arrowroot flour with water then add it to thicken the sauce.
  6. Bring to a boil then reduce heat and simmer for about 20 minutes.
  7. Serve garnished with parsley alongside your favorite sides.
