  • 1 can (15 oz) white (cannellini) beans, drained & rinsed
  • 2 mini cucumbers, chopped
  • 1/2 red bell pepper, chopped
  • 10 oz cherry tomatoes, halved
  • 1/3 cup Kalamata olives, pitted & chopped
  • 1/2 cup crumbled feta cheese
  • Olive oil & red wine vinegar for dressing
