  • 1 lb ground chicken
  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • Fresh dill
  • Lemon juice
  • Oregano
  • Paprika
  • Cumin
  • Salt
  • Pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic for another 30 seconds.
  2. In a mixing bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into eight patties (about ½ inch thick).
  4. In the same skillet, heat remaining olive oil over medium heat. Cook each patty for about 5–6 minutes per side until golden brown and cooked through.
  5. Drain excess oil on paper towels and serve warm with your choice of dips or garnishes.
