  • 1 lb ground beef
  • ½ cup Italian bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • 2 cups marinara sauce
  • 4 sub rolls
  • 1½ cups finely shredded mozzarella cheese
  • 1 tablespoon chopped fresh Italian parsley or fresh basil (optional)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, oregano, basil, onion powder, garlic powder, salt, and pepper. Form into 1-inch meatballs.
  2. Brown meatballs in a skillet over medium heat until golden. Drain excess grease and add marinara sauce; simmer for 15 minutes.
  3. Split sub rolls open, butter lightly and toast under the broiler until golden.
  4. Layer mozzarella on bottom of each roll; add meatballs and top with remaining cheese. Broil until melted and bubbly.
  5. Serve warm with optional parsley or extra Parmesan.
