  • 2 cooked and cubed chicken breasts
  • 6 medium red potatoes (cubed with skin on)
  • 1 minced garlic clove
  • 3 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 8 strips of cooked and chopped bacon
  • 2 cups shredded sharp cheddar cheese
  • ½ cup sliced green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9 x 13-inch casserole dish with cooking spray.
  2. In a medium bowl, mix together the cubed potatoes, cooked chicken, minced garlic, olive oil, paprika, parsley, oregano, cayenne pepper, salt, and pepper until evenly coated.
  3. Transfer the mixture to the prepared casserole dish and bake for 45–50 minutes until the potatoes are tender.
  4. Remove from the oven and top with chopped bacon, shredded cheese, and sliced green onions. Return to the oven for an additional 5–10 minutes until the cheese is melted.
