  • 1 small onion, finely diced
  • 1/2 medium red bell pepper, finely diced
  • 3 cloves garlic, minced
  • 1 lb ground fresh pork
  • 1 lb ground beef (85/15)
  • 1/2 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/4 cup milk
  • 1/4 cup pineapple juice
  • 1 Tbsp Worcestershire sauce
  • 3 tsp Jamaican Jerk seasoning

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with aluminum foil and set aside.
  2. In a skillet, heat olive oil over medium-high heat; sauté onion and red pepper until translucent. Stir in garlic and cook for an additional minute. Allow to cool slightly.
  3. In a mixing bowl, combine sautéed vegetables with ground meats, breadcrumbs, eggs, milk, pineapple juice, Worcestershire sauce, and jerk seasoning. Mix until just combined.
  4. Form mixture into bite-sized meatballs and place them on the prepared baking sheet.
  5. Bake for 20 minutes at 375°F; then increase temperature to 425°F and bake for another 10 minutes until golden brown.
