  • 1/2 lb bacon
  • 1 onion
  • 1/2 cabbage
  • 1/2 lb potatoes
  • 1 carrot
  • 4 to 5 cups chicken stock
  • 1 bay leaf
  • Kosher salt and black pepper

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy (5-7 minutes). Remove with a slotted spoon and set aside.
  2. Add chopped onion to the pot and sauté for 3-4 minutes until softened. Add sliced carrot and cook for another 2 minutes.
  3. Stir in diced potatoes and chopped cabbage; season with salt and pepper. Cook for 3-4 minutes.
  4. Pour in chicken stock and add bay leaf. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until tender.
  5. Return cooked bacon to the pot, stir well, taste, and adjust seasoning as needed.
  6. Serve warm garnished with chopped parsley.
