Easy Instant Pot White Chicken Chili is a comforting and creamy dish that’s perfect for any occasion. This one-pot wonder combines tender chicken, hearty great northern beans, sweet corn, and flavorful spices to create a deliciously satisfying soup.

  • 30 oz. great northern beans (drained and rinsed)
  • 2 cups frozen corn
  • 1/2 cup yellow onion (diced)
  • 2 garlic cloves (minced)
  • 4 oz. hatch green chiles
  • 1 lb. boneless skinless chicken
  • 1/2 cup plain cream cheese
  • 1 1/4 cup chicken broth
  • Spices: chili powder, cumin, salt, black pepper

Instructions

  1. Gather all ingredients.
  2. In the Instant Pot, layer beans at the bottom, followed by corn, onion, garlic, green chiles, spices, and finally chicken on top.
  3. Cut cream cheese into chunks and place over chicken; pour in chicken broth.
  4. Close the lid and set to 'seal.' Pressure cook on high for 15 minutes.
  5. After cooking, allow natural release for 10 minutes before manually releasing remaining steam.
  6. Shred chicken using two forks; stir everything together until well mixed.
