  • 1 lb lean ground turkey
  • 1 cup salsa
  • 2 cups chicken broth
  • 1 (15-oz) can black beans
  • 3 cups grated colby jack cheese
  • ⅔ cup white rice
  • 1 Tbsp avocado oil (or olive oil)
  • 1 yellow onion (diced)
  • 1 red bell pepper (chopped)
  • 4 cloves garlic (minced)
  • 3 Tbsp chili powder
  • 1 (7-oz) can green chilis
  • 1 tsp sea salt (to taste)

Instructions

  1. Preheat oven to 375°F and spray a 13” x 9” casserole dish with cooking spray.
  2. In a large skillet over medium-high heat, sauté diced onion in avocado oil until softened. Add ground turkey and cook until mostly browned.
  3. In the prepared baking dish, combine chopped bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked rice, drained black beans, green chiles, and sea salt. Mix well.
  4. Stir in the cooked turkey mixture and top with grated cheese.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil and broil on high for an additional 5-8 minutes until cheese is bubbly and golden.
  6. Serve hot with toppings like avocado slices or sour cream.
