  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • Optional toppings: diced tomatoes, shredded cheddar cheese, fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce sweet potatoes with a fork and place them on a lined baking sheet. Bake for 40-50 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion for 3-4 minutes; add garlic and bell pepper, cooking for an additional 2-3 minutes.
  3. Add ground turkey to the skillet, breaking it apart as it cooks until browned (about 6-8 minutes). Season with spices.
  4. Stir in corn and mix well. Cook for another 2-3 minutes.
  5. Once sweet potatoes are done, slice them open and fluff the insides with a fork. Stuff each potato with the turkey mixture and top with optional cheese if desired.
  6. Return to the oven for an additional 5-7 minutes to melt cheese (if using). Garnish with cilantro.
