  • 1 pound ground turkey
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can (14.5 ounces) diced tomatoes (drained)
  • 8 medium flour or corn tortillas
  • 1 can (10 ounces) enchilada sauce
  • 1 ½ cups shredded cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onion until translucent, then add minced garlic.
  2. Add ground turkey, cooking until browned. Stir in black beans, diced tomatoes, green chilies, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Preheat oven to 375°F (190°C). Spread a layer of enchilada sauce at the bottom of a baking dish.
  4. Fill each tortilla with about ¼ cup of filling, roll tightly, and place seam-side down in the dish. Pour remaining sauce over the top and sprinkle cheese.
  5. Bake for 20–25 minutes until cheese is bubbly and golden brown.
