  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat. Add olive oil and let it warm for about 1 minute.
  2. Add ground turkey to the skillet. Break it apart with a spatula and cook until browned (6-8 minutes).
  3. While the turkey cooks, slice the zucchinis into half-moon shapes.
  4. Remove excess fat from the skillet then add zucchini to the turkey. Stir well.
  5. Sprinkle in garlic powder, onion powder, salt, black pepper, oregano, and paprika. Cook for 5-7 minutes until zucchini is tender.
  6. Add shredded mozzarella cheese on top and cover with a lid for 1-2 minutes until melted.
  7. Remove from heat, stir gently to combine cheese, sprinkle with parsley before serving.
