Ingredients

Scale
  • 1 pound lean ground chicken
  • 3 cups cooked long-grain rice (preferably day-old)
  • 1 medium onion (diced)
  • 2 carrots (peeled and diced)
  • 1 cup frozen peas
  • 2 cloves garlic (minced)
  • 2 large eggs (lightly beaten)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon white pepper
  • 2 green onions (sliced, for garnish)

Instructions

  1. Prep all ingredients by chopping vegetables and measuring seasonings.
  2. In a wok or large skillet, heat 1 tablespoon of oil over medium-high heat. Cook ground chicken until browned, about 5-7 minutes.
  3. Push chicken aside; add diced onions and carrots to the pan. Sauté for 2-3 minutes until softened.
  4. Create space for eggs in the pan; scramble them until fully cooked, then mix back into the chicken and vegetables.
  5. Add day-old rice, breaking clumps apart. Stir-fry everything together for about 3-4 minutes.
  6. Pour in soy sauce and sesame oil; add frozen peas and stir well until heated through (about 2-3 minutes).
  7. Garnish with white pepper and sliced green onions before serving.
