  • 1 pound ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, diced (optional)
  • 1 small jalapeño, seeded and finely diced (optional)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 8 large flour tortillas
  • 3 cups shredded cheese (Mexican blend, cheddar, or Monterey Jack)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground beef and onion; cook until browned.
  2. Stir in garlic and optional veggies; sauté for about 4 minutes.
  3. Mix in spices and tomato paste; simmer with beef broth until thickened.
  4. Lay tortillas flat; layer cheese, beef mixture, and more cheese on half of each tortilla. Fold in half.
  5. Cook each quesadilla in the skillet until golden and cheese melts, about 2–3 minutes per side.
  6. Slice into wedges and serve with salsa, guacamole, or sour cream.
