  • 8 tablespoons unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 2 teaspoons peppermint extract
  • ½ teaspoon vanilla extract
  • Green gel food coloring
  • ¼ cup powdered sugar
  • 3 tablespoons cornstarch
  • Red heart-shaped sprinkles

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cake mix, softened butter, and eggs using a mixer until fully blended.
  3. Stir in peppermint extract, vanilla extract, and enough green food coloring until the desired shade is reached.
  4. In another bowl, whisk together powdered sugar and cornstarch.
  5. Scoop dough into balls using a cookie scoop and roll each in the powdered sugar mixture before placing them on the baking sheet about an inch apart.
  6. Bake for 10 to 12 minutes or until edges are set.
  7. After removing from the oven, press a heart-shaped sprinkle onto each cookie while still warm.
  8. Allow cookies to cool on the baking sheet for five minutes before transferring them to a wire rack.
