  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Heat a large cast iron skillet over medium heat; add olive oil and 2 tablespoons of ghee.
  2. Add cubed Yukon gold potatoes along with minced garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes until golden brown and tender, then remove from the pan.
  3. Increase the heat to medium-high; add remaining ghee and sear the steak cubes seasoned with salt and pepper for about 2 minutes without stirring. Stir and cook until golden brown (1-2 minutes).
  4. Return cooked potatoes to the skillet, mix well, adjust seasoning if needed, and serve hot.
