  • 1 lb ground beef (or mix of beef and pork)
  • 1 large egg
  • ½ cup breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 12 oz linguine
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground meat, egg, breadcrumbs, Parmesan, parsley, garlic, salt, and pepper until just combined. Form into meatballs.
  2. Heat olive oil in a skillet over medium heat; brown meatballs on all sides (6–8 minutes). Remove and set aside.
  3. In the same skillet, add butter and garlic; cook until fragrant (1–2 minutes). Stir in lemon juice and return meatballs to the pan; simmer for 5–7 minutes.
  4. Cook linguine according to package instructions; reserve pasta water. In a saucepan, melt butter, add cream and Parmesan; season and combine with linguine.
  5. Serve meatballs over linguine; drizzle with extra sauce and garnish.
