  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water; stir in vanilla.
  3. In a separate bowl, whip eggs and both sugars until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt; add chocolate chips.
  5. Fold melted chocolate mixture into whipped eggs gently.
  6. Incorporate dry ingredients until just combined.
  7. Scoop onto a lined baking tray and bake for 12-14 minutes until set but still soft.
  8. Allow to cool on the tray before transferring to a cooling rack.
