  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast (or 2 ¼ teaspoons)
  • 4 ½ cups all-purpose flour
  • ¼ cup melted butter
  • 10 cups water
  • 2/3 cup baking soda
  • Pretzel salt

Instructions

  1. In a stand mixer bowl, combine warm water, sugar, and salt. Sprinkle yeast on top; let sit for 5 minutes until foamy.
  2. Add flour and melted butter. Mix on low speed using the dough hook until combined; then knead on medium speed for about 4–5 minutes until smooth.
  3. Oil the dough with non-stick spray, cover it, and let it rise in a warm spot for about 50–55 minutes or until doubled in size.
  4. Preheat oven to 450°F (232°C). Line baking sheets with parchment paper and lightly oil.
  5. Boil water mixed with baking soda in a large saucepan. Roll the risen dough into ropes and shape them into pretzels.
  6. Boil each pretzel in the solution for about 30 seconds, then place them on prepared sheets.
  7. Brush tops with an egg yolk mixture and sprinkle with pretzel salt before baking for approximately 12–14 minutes until golden brown.
