  • 4 tablespoons butter
  • 3/4 cup carrots, diced
  • 3/4 cup celery, diced
  • 3/4 cup onion, diced
  • 4 cups potatoes, diced

  • 1 to 2 cups Velveeta cheese, cubed
  • 1 1/2 cups whole milk
