  • 2 medium carrots (sliced)
  • 2 sticks celery (chopped)
  • 1 can crushed tomatoes (28 ounces)
  • 1 can diced tomatoes (14 ounces)
  • 4 cups chicken broth
  • 18 ounces refrigerated cheese tortellini
  • 3/4 cup heavy cream (optional)
  • 2 cups fresh baby spinach
  • Salt and pepper to taste

Instructions

  1. Brown the sausage and onion in a skillet over medium heat until cooked through, approximately 7-8 minutes.
  2. Stir in minced garlic for about 30 seconds, then transfer the mixture to your Crockpot.
  3. Add chopped carrots, celery, crushed tomatoes, diced tomatoes, and chicken broth into the Crockpot.
  4. Cook on high for 3-4 hours or low for 6-8 hours.
  5. About 30 minutes before serving, stir in cheese tortellini, heavy cream (if using), and spinach. Cook until the tortellini is tender.
  6. Season with salt and pepper to taste before serving.
