  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken, cooking until browned (5–7 minutes). Set aside.
  3. Sauté onion for 3–4 minutes, then add garlic for another 1–2 minutes.
  4. Return chicken to the pot, pour in broth, and stir well.
  5. Incorporate heavy cream and whole milk; mix thoroughly.
  6. Add seasonings (basil, oregano, salt, pepper) and simmer for 10–15 minutes.
  7. Stir in Parmesan and mozzarella until melted.
  8. Add spinach, carrot, and celery; cook until tender (5–7 minutes).
