  • 1 lb boneless skinless chicken breasts
  • 1 yellow onion (diced)
  • 2 cloves garlic (minced)
  • 24 oz low-sodium chicken broth
  • 2 (15 oz) cans great Northern beans (drained and rinsed)
  • 2 (4 oz) cans diced green chiles
  • 1 (15 oz) can whole kernel corn (drained)
  • 4 oz reduced-fat cream cheese
  • 1/4 cup half-and-half

Instructions

  1. Place chicken breasts in the bottom of the slow cooker. Season with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
  2. Add diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth, and chopped cilantro. Stir to combine.
  3. Cover and cook on LOW for 8 hours or HIGH for 3-4 hours until chicken is fully cooked.
  4. Shred cooked chicken in a mixing bowl using two forks, then return it to the slow cooker.
  5. Mix in softened cream cheese and half-and-half until creamy. Cook on HIGH for an additional 15 minutes.
  6. Stir well before serving and garnish with your favorite toppings.
