  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Alfredo sauce
  • 8 lasagna noodles, broken into pieces
  • Italian seasoning

  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground sausage and cook until browned; drain excess grease if needed.
  2. Stir in chopped onion and sauté until softened. Add minced garlic and cook until fragrant.
  3. Add chicken broth and bring to a simmer. Season with Italian seasoning, crushed red pepper flakes (if using), salt, and pepper.
  4. Stir in broken lasagna noodles and simmer for 10–12 minutes until tender.
  5. Lower heat and gently stir in heavy cream and Alfredo sauce; simmer for an additional 2–3 minutes.
  6. In a separate bowl, mix ricotta cheese with mozzarella and Parmesan.
  7. Serve soup in bowls topped with the cheesy mixture.
