  • 1/4 cup chili sauce

  • 1 tablespoon fish sauce
  • 1/2 cup cilantro, finely chopped
  • 2/3 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F and lightly oil two mini muffin tins.
  2. In a mixing bowl, combine ground chicken, chili sauce, garlic, ginger, fish sauce, cilantro, coconut milk, salt, and pepper. Mix until just combined.
  3. Spoon the mixture into the muffin tins until three-quarters full.
  4. Bake for 15-20 minutes or until golden brown and fully cooked.
  5. Let cool slightly before serving with extra chili sauce.
