  • 4 large egg yolks

Instructions

  1. Heat the heavy cream, whole milk, and half of the sugar in a medium saucepan over medium heat until steaming.
  2. In a separate bowl, whisk together the egg yolks, remaining sugar, and salt until pale.
  3. Gradually add the hot cream mixture to the egg yolks while whisking to temper them.
  4. Return the mixture to the saucepan and cook over medium-low heat until thickened (about 5-7 minutes), stirring constantly.
  5. Remove from heat and stir in vanilla extract and chopped chocolate until smooth.
  6. Strain through a fine-mesh sieve into a bowl, cover with plastic wrap directly on top to prevent skin formation, and chill for at least 4 hours or overnight.
  7. Churn in an ice cream maker according to instructions until soft-serve consistency is reached (20-25 minutes).
  8. Transfer to a freezer-safe container and freeze for an additional 2-3 hours until firm before serving.
