  • 1 1/4 pounds ground chicken
  • 1 medium zucchini (coarsely chopped)
  • Kernels from 1 ear of corn
  • 1/2 medium red bell pepper (finely diced)
  • 3 green onions (sliced)
  • 1 large egg (lightly beaten)
  • 1/2 cup Panko bread crumbs
  • 2 tablespoons fresh cilantro (chopped)
  • 3 garlic cloves (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • Olive oil (for searing)

Instructions

  1. Preheat your oven to 425°F.
  2. In a large mixing bowl, combine the ground chicken, zucchini, corn kernels, red bell pepper, green onions, egg, Panko breadcrumbs, cilantro, garlic, cumin, coriander, salt, and pepper. Mix until just combined.
  3. Form the mixture into uniform patties.
  4. Heat olive oil in an oven-proof sauté pan over medium heat. Sear the patties for about 2 minutes on each side until golden brown.
  5. Transfer the pan to the preheated oven and bake for 7 to 10 minutes until the internal temperature reaches 165°F.
  6. Serve warm with Tomato-Cucumber Relish or your favorite toppings.
