  • 5 1/2 Tbsp butter
  • 1 1/3 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 2 cloves garlic
  • 3 cups low-sodium chicken broth
  • 3 1/2 cups russet potatoes (peeled and cubed)
  • 3 cups chopped broccoli florets
  • Salt and pepper to taste
  • 6 Tbsp all-purpose flour
  • 3 cups milk
  • 1/2 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/3 cup finely shredded parmesan cheese

Instructions

  1. In a large pot over medium heat, melt 1.5 Tbsp butter. Sauté carrots, celery, and onion for about 4 minutes until softened. Add garlic and sauté for an additional 30 seconds.
  2. Stir in chicken broth, potatoes, thyme, salt, and pepper; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes. Add broccoli and cook for an additional 5 minutes until tender.
  3. Meanwhile, in a medium saucepan, melt remaining butter over medium heat; whisk in flour for one minute. Gradually add milk while whisking until smooth. Once thickened, stir in heavy cream.
  4. Combine creamy mixture into the soup pot; add cheddar and parmesan until melted. Serve warm.
