  • 1 tablespoon butter
  • 1/4 cup olive oil (for chili oil)
  • 1 tablespoon chili flakes
  • Salt and pepper (to taste)
  • Optional: Fresh parsley and grated Parmesan cheese for garnish

Instructions

  1. For the onions: Heat olive oil and butter in a large skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook slowly for about 25–30 minutes until golden brown.
  2. For the pasta: Boil salted water in a pot, add pasta, and cook until al dente. Reserve 1 cup of pasta water before draining.
  3. For the chili oil: In a saucepan, combine olive oil, chili flakes, minced garlic, smoked paprika (if using), and salt over low heat. Simmer for 5 minutes.
  4. Combine: Add drained pasta to the skillet with caramelized onions and pour in chili oil. Mix well, adding reserved pasta water as needed.
  5. Serve: Plate the pasta garnished with fresh parsley and grated Parmesan cheese. Drizzle extra chili oil if desired.
