  • 1 lb bulk breakfast sausage
  • 1 medium red pepper, chopped
  • 1 small onion, chopped
  • ½ cup green onions, chopped
  • 2½ cups shredded cheddar cheese (divided)
  • 10 flour tortillas
  • 2 cups half-and-half
  • 6 eggs
  • 1 tablespoon flour

Instructions

  1. In a large pan, cook sausage with red pepper and onion until the sausage is browned. Let cool slightly.
  2. In a mixing bowl, combine the sausage mixture with green onions and 2 cups of cheese.
  3. Scoop about 1/3 cup of the filling onto each tortilla, roll tightly, and place seam side down in a greased baking dish.
  4. Whisk together half-and-half, eggs, and flour. Pour over rolled tortillas and refrigerate overnight.
  5. Preheat oven to 350ºF and bake covered for 30-40 minutes until eggs are set. Uncover, sprinkle remaining cheese on top, and bake for an additional 10 minutes until melted.
