  • ¼ cup coconut aminos (or soy sauce)
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 medium red bell pepper (finely diced)
  • ½ cup shredded carrots
  • Boston Bibb lettuce leaves

Instructions

  1. In a measuring cup, whisk together maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes. Add arrowroot powder and whisk until smooth.
  2. Heat olive oil in a skillet over medium-high heat. Cook ground beef for about 5 minutes until no longer pink.
  3. Stir in minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.
  4. Add diced red bell pepper and shredded carrots; cook for an additional 3-4 minutes until tender yet crisp.
